  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 cups marinara sauce
  • 9 no-boil lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or spinach (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, sauté diced chicken with olive oil over medium heat until golden and cooked through (7-10 minutes).
  3. Add minced garlic and cook until fragrant; pour in marinara sauce and simmer for 5 minutes.
  4. Spray a 9×13-inch baking dish with nonstick spray and spread some sauce at the bottom.
  5. Layer noodles, chicken mixture, and dollops of ricotta cheese repeatedly until all ingredients are used (aim for three layers).
  6. Cover with foil and bake for 25 minutes; remove foil, add mozzarella on top, then bake uncovered for another 15 minutes until bubbly.
