  • 2 cups long-grain basmati rice
  • 2 medium onions, thinly sliced
  • 1 cup full-fat yogurt
  • ½ cup fresh cilantro, chopped
  • ½ cup fresh mint, chopped
  • 2 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 2 tbsp ginger-garlic paste
  • Saffron (optional), soaked in 2 tbsp warm milk

Instructions

  1. 1. Marinate the chicken: In a bowl, combine yogurt, ginger-garlic paste, garam masala, turmeric, cumin, and salt. Add chicken and coat well. Let it marinate for at least 30 minutes.
  2. 2. Sauté onions: In a large pot over medium heat, add oil and sauté sliced onions until golden brown and caramelized.
  3. 3. Cook chicken: Stir in the marinated chicken and cook until white and fragrant (about 10 minutes).
  4. 4. Prepare rice: Rinse basmati rice until water runs clear. Boil salted water in another pot and cook rice until al dente (5–7 minutes).
  5. 5. Layer: Once the chicken is ready, layer half the rice over it, drizzle saffron-infused milk (if using), sprinkle herbs, then top with remaining rice.
  6. 6. Final cook: Cover tightly and cook on low heat for 20–25 minutes to meld flavors.
