  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by finely chopping the garlic and rinsing the spinach under cool water.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown and reaching an internal temperature of 165°F (75°C). Remove from skillet.
  3. In the same skillet, reduce heat slightly and add minced garlic; sauté for about 30 seconds until fragrant. Add fresh spinach and stir until wilted.
  4. Pour in heavy cream, scraping up any bits from the bottom of the pan, then stir in grated Parmesan cheese until melted and combined into a creamy sauce.
  5. Return cooked chicken to the skillet, coating with sauce, and let simmer for another 2-3 minutes to blend flavors before serving.
