  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Season the chicken breasts generously with salt, pepper, onion powder, and garlic powder before placing them at the bottom of the dish.
  3. Layer uncooked rice over the chicken.
  4. In a separate bowl, mix together chicken broth and cream of mushroom soup; pour over the layered ingredients.
  5. Scatter frozen vegetables on top followed by shredded cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil during the last 10 minutes to achieve a golden crust.
