Instructions

  1. Gather all ingredients and tools: a large pot, thermometer, slotted spoon, and a large bowl.
  2. Heat the milk in the pot over medium heat until it reaches 190°F (88°C), stirring gently.
  3. Remove from heat and stir in vinegar or lemon juice; allow it to sit for about 10 minutes.
  4. Using a slotted spoon, transfer the curds into a bowl and rinse under cold water.
  5. Sprinkle salt over the curds and mix gently. If desired, drizzle with melted butter.
