  • 1 gallon whole milk
  • 1/4 cup white vinegar
  • 1 tsp kosher salt
  • 1/4 tsp rennet (liquid form)

Instructions

  1. Gather all necessary equipment: a large pot, thermometer, slotted spoon, and cheesecloth.
  2. Pour the whole milk into the pot and heat over medium-low flame until it reaches 190°F (88°C), stirring gently to prevent scorching.
  3. Remove from heat and stir in white vinegar followed by rennet. Let sit undisturbed for 5-10 minutes until curds form.
  4. Cut the curds into 1-inch pieces using a knife or spatula.
  5. Return the pot to low heat, stirring gently for another 5-10 minutes until curds firm slightly but remain soft.
  6. Line a colander with cheesecloth, pour the curds in to drain excess whey, then rinse under cold water and sprinkle evenly with salt.
