  • Salt (for boiling water)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to boil. Add spaghetti and cook until al dente according to package instructions. Reserve ½ cup of pasta water before draining.
  2. Sauté Pancetta: In a skillet over medium heat, fry the diced pancetta until crispy (about 5-7 minutes). Remove from heat.
  3. Prepare Egg Mixture: Whisk together eggs, parmesan cheese, and black pepper in a bowl until creamy.
  4. Combine Ingredients: Toss hot pasta with pancetta in the skillet off the heat. Quickly pour the egg mixture over the pasta while tossing rapidly to create a silky sauce. If too thick, gradually add reserved pasta water.
  5. Serve Immediately: Plate your carbonara and top with additional parmesan and black pepper.
