  • 1 lb lean ground beef
  • 1 packet taco seasoning (1 oz)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (16 oz) refried beans
  • 6 flour tortillas (8-inch)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup salsa
  • 4 green onions, chopped
  • Sour cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown ground beef for 5-7 minutes; drain excess fat. Stir in taco seasoning until fragrant.
  3. Mix in black beans, refried beans, and half of the salsa; simmer for 3-5 minutes.
  4. Layer half of meat mixture in the baking dish, top with tortillas, then repeat layers ending with cheese and salsa.
  5. Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to brown cheese.
  6. Garnish with green onions and serve warm.
