  • 2 lbs chuck roast, cut into large chunks
  • 5 dried guajillo peppers, soaked
  • 1 tsp cumin
  • 1/4 cup lime juice (freshly squeezed)

  • 8 corn tortillas
  • 1 cup diced onions
  • 1 cup Oaxaca cheese
