Beef quesadillas are a delightful combination of crispy tortillas filled with savory ground beef, melted cheese, and colorful veggies. This easy-to-make dish is perfect for weeknight dinners or game nights, bringing everyone together for a flavor-packed experience.

  • 1 lb lean ground beef
  • 2 cups shredded cheese (Monterey Jack or cheddar)
  • 1 cup bell peppers (mixed red and green), diced
  • 1 small onion, finely chopped
  • 2 tbsp taco seasoning
  • Sour cream (optional, for dipping)

Instructions

  1. In a skillet over medium heat, brown the ground beef for about 5-7 minutes until crumbly.
  2. Add the onion and bell peppers; sauté for another 5 minutes until softened.
  3. Mix in the taco seasoning and cook for an additional 2-3 minutes.
  4. Heat another skillet over medium heat. Place one tortilla in the pan, sprinkle half with cheese, then add some beef mixture before folding.
  5. Cook each quesadilla for 3-4 minutes per side until golden brown and crispy.
  6. Remove from heat and slice into wedges. Serve warm with sour cream.
