  • 1 lb flank steak
  • 2 bell peppers (mixed colors)
  • 1 medium onion
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp lime juice
  • 4 tortillas (flour or corn)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Marinate the Beef: Combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and pepper in a bowl. Add the flank steak and coat well. Refrigerate for at least 30 minutes.
  2. Sauté the Veggies: Heat a skillet over medium-high heat. Add sliced bell peppers and onion with a sprinkle of salt. Cook until softened and slightly charred (about 5–7 minutes). Remove from skillet.
  3. Cook the Beef: In the same skillet, sear marinated flank steak for about 4–5 minutes on each side until medium-rare or cooked to your preference.
  4. Rest and Slice: Let the steak rest for 5 minutes before slicing against the grain into thin strips.
  5. Assemble Fajitas: Warm tortillas in a skillet or microwave. Fill each tortilla with beef slices and sautéed veggies. Squeeze fresh lime juice on top before folding.
