  • 1214 lb whole turkey
  • 1/4 cup olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 cups dry breadcrumbs
  • 1 cup onion, finely chopped
  • 1 cup celery, finely chopped
  • 2 cups low-sodium chicken broth

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Rinse turkey under cold water and pat dry. Remove giblets.
  3. Slide fingers under the skin of the turkey breast to create pockets. Rub olive oil mixed with herbs directly onto the meat.
  4. Season generously with salt and pepper.
  5. Combine breadcrumbs, sautéed onion, celery, and moisten with chicken broth. Stuff into the turkey cavity.
  6. Roast in a pan breast side up for about 13 minutes per pound or until the internal temperature reaches 165°F (74°C).
  7. Let rest for at least 20 minutes before carving.
