Ingredients

Scale
  • 1 cup grated zucchini (about 2 medium zucchinis)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour (or whole wheat)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grate the zucchini and place it on a clean towel to absorb excess moisture.
  2. In a large mixing bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. Sift together flour, cocoa powder, baking soda, and salt; gradually fold into the wet mixture.
  4. Gently mix in the grated zucchini and chocolate chips until just combined.
  5. Pour the batter into a greased 9×13 inch baking dish. Bake for 25-30 minutes until a toothpick comes out with moist crumbs.
  6. Allow cooling for about 15 minutes before slicing into squares.
