Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, ginger, and salt.
  3. In another bowl, combine pumpkin puree and granulated sugar until smooth. Mix in melted butter and incorporate dry ingredients to form a thick batter.
  4. Drop spoonfuls of batter onto prepared sheets about 2 inches apart. Bake for 12-15 minutes or until a toothpick comes out clean.
  5. For the filling, beat softened butter with powdered sugar and vanilla until fluffy.
  6. Once cooled, spread filling between two cookie halves and press gently.
