Brookies are the ultimate dessert mashup, combining the rich, fudgy goodness of brownies with the delightful crunch of cookies.   • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs (room temperature)
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine melted butter and granulated sugar until smooth. Add eggs one at a time, whisking well.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Fold into wet ingredients until just combined.
  4. In a separate bowl, cream brown sugar and softened butter until fluffy. Beat in an egg and then gradually add flour and salt.
  5. Spread half of the brownie batter in the pan. Add spoonfuls of cookie dough on top and cover with remaining brownie batter.
  6. Bake for 25-30 minutes until edges are set but centers remain soft. Allow to cool in the pan for 10 minutes before transferring to a cooling rack.
