  • ¼ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 6 ounces dark chocolate chips
  • 4 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, cocoa powder, sugar, and butter until crumbly. Gradually add cold water to form dough.
  2. Roll out the dough into a circle about 12 inches wide and transfer to a 9-inch pie pan. Prick the bottom with a fork and bake for 15 minutes until lightly golden. Allow cooling completely.
  3. Melt chocolate chips until smooth. In another bowl, beat eggs and sugar until fluffy. Gradually mix in cooled chocolate and vanilla extract until silky smooth.
  4. Pour filling into the cooled crust and refrigerate for at least four hours or overnight to set.
  5. Before serving, whip heavy cream until stiff peaks form and spread over the pie.
