  • 1/2 cup sun-dried tomatoes, chopped (oil-packed)
  • 4 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated fresh Parmesan cheese
  • 2 tsp poultry seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil (optional)

Instructions

  1. Pat dry the chicken breasts with paper towels; season generously with salt and pepper.
  2. In a large skillet over medium heat, warm the olive oil. Add minced garlic, cooking until fragrant (about 30 seconds).
  3. Add the seasoned chicken breasts and sear until golden brown on both sides (7-8 minutes per side).
  4. Once cooked through, stir in chopped sun-dried tomatoes and spinach until the spinach wilts.
  5. Pour in heavy cream and scrape any browned bits from the skillet. Gradually add grated Parmesan cheese until melted.
  6. Season with poultry seasoning and adjust salt and pepper as needed. Let simmer on low heat until slightly thickened.
