  • 2 cups ripe tomatoes (fresh or canned)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tsp kosher salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by washing and quartering the tomatoes if using fresh ones.
  2. In a pot over medium heat, add olive oil and sauté the chopped onion until soft and translucent.
  3. Add the chopped tomatoes and minced garlic to the pot, stirring occasionally for about 10 minutes until simmering.
  4. Transfer the mixture to a blender or use an immersion blender to puree until smooth.
  5. Return the blended mixture to the pot. Stir in apple cider vinegar, brown sugar, salt, cinnamon, and cloves.
  6. Simmer on low heat for approximately 30 minutes, stirring occasionally until thickened to your liking.
  7. Allow the ketchup to cool completely before transferring it into jars or bottles for storage in the fridge.
