  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tbsp chili powder (adjust to taste)
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and bell peppers; sauté until softened.
  2. Stir in garlic, cumin, and chili powder; cook for one minute until fragrant.
  3. Add kidney beans, black beans, and diced tomatoes with their juice; mix well.
  4. Pour in vegetable broth until the mixture is just covered; bring to a gentle simmer.
  5. Let it simmer uncovered for about 30 minutes, stirring occasionally. Season with salt and pepper as needed.
