  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 bell pepper (any color), diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

  1. Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper until softened (about 5 minutes).
