  • 3 garlic cloves, minced
  • 1 lb ground beef or turkey
  • 28 oz canned diced tomatoes (preferably fire-roasted)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion and bell peppers until softened, about 5 minutes.
  2. Add the minced garlic and ground meat; cook until browned, breaking it apart with a spoon (about 7 minutes).
  3. Stir in the canned diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  4. Reduce heat to low, cover the pot, and let it simmer for 30 minutes to meld flavors.
  5. Taste and adjust seasonings as necessary before serving. Optionally top with fresh cilantro.
