  • 1 (14 oz) can diced tomatoes
  • 6 cups low-sodium vegetable broth
  • 1 cup ditalini pasta (or shells)
  • 1 cup green beans, trimmed and chopped
  • 2 cups kale or spinach, chopped
  • ¼ cup fresh basil or parsley, chopped
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery; sauté until onions are translucent.
  2. Stir in minced garlic and cook for another minute until fragrant.
