  • 1 cup pearl barley
  • 2 large carrots, sliced thick
  • 2 stalks celery, chopped
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Sear the beef: Heat oil in a large pot over medium-high heat. Brown the beef cubes in batches until all sides are golden brown.
  2. Sauté aromatics: Remove beef and add onions, celery, and carrots to the pot. Cook until softened.
  3. Add garlic and herbs: Stir in garlic, thyme, and bay leaves; cook for about 30 seconds until fragrant.
  4. Combine barley and broth: Add pearl barley and pour in enough beef broth to cover ingredients by an inch. Bring to a boil.
  5. Simmer: Reduce heat to low and let simmer for 1.5 hours or until beef is tender and barley has absorbed flavors.
