  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 8 oz cream cheese
  • Juice of 1 lime

Instructions

  1. Gather all ingredients and prepare your slow cooker.
  2. Season the chicken breasts with salt and pepper and place them in the bottom of the slow cooker.
  3. In a skillet over medium heat, sauté chopped onion and minced garlic for about 5 minutes until fragrant.
  4. Add the sautéed onion and garlic to the slow cooker over the chicken, then layer in green chilies, white beans, chicken broth, cumin, chili powder, and lime juice. Stir gently to combine.
  5. Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
  6. Shred the chicken directly in the pot using two forks. Stir in cream cheese until melted and fully incorporated.
