Ingredients

  • 4 cups fresh kale, torn into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup almonds or walnuts, toasted
  • 1/3 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Wash the kale thoroughly under cool water and dry completely.
