  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes in batches until seared on all sides; remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 3-4 minutes).
  3. Return beef to the pot along with carrots and potatoes. Pour in beef broth until ingredients are submerged; add bay leaves and thyme.
  4. Bring to a boil, then reduce heat to low and simmer covered for 1.5 to 2 hours until meat is tender.
  5. Season with salt and pepper before serving hot.
