  • 8 rice paper wrappers (8-inch)
  • 1 cup lettuce leaves, shredded
  • 1 medium carrot, julienned
  • 1 cucumber, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 8 oz shrimp (cooked) or tofu (cubed)
  • 1/4 cup sweet chili sauce or peanut sauce for dipping

Instructions

  1. Prepare all vegetables by washing and slicing them into thin strips.
  2. Soften each rice paper wrapper in warm water for about 10 seconds until pliable.
  3. Lay the softened rice paper on a clean surface and place a small amount of each filling near the bottom edge.
  4. Fold up the bottom over the filling, tuck in the sides tightly, and roll up completely.
  5. Repeat until all ingredients are used. Arrange rolls on a plate and cover with a damp cloth.
  6. Serve with your favorite dipping sauce.
