  • 4 cups mixed vegetables (fresh or frozen)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 tsp garlic powder
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté mixed vegetables until tender, about 5-7 minutes.
  3. In a large bowl, mix sautéed vegetables with cream of mushroom soup, garlic powder, and half of the cheddar and mozzarella cheese until well combined.
  4. Pour the mixture into the greased baking dish, top with breadcrumbs and remaining cheese.
  5. Bake for 30-35 minutes until bubbly and golden brown.
