  • 1 cup basmati or jasmine rice
  • 1/4 tsp high-quality saffron threads
  • 2 cups vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter or olive oil
  • 1/2 tsp salt

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a large pot, melt butter over medium heat and sauté onion until translucent (about 5 minutes). Add garlic and sauté for another minute.
  3. Stir in the rinsed rice, coating it with butter, then add saffron threads with a splash of warm broth.
  4. Pour in the remaining broth and salt; bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until liquid is absorbed.
  5. Remove from heat and let sit covered for another 10 minutes before fluffing with a fork.
