  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup pumpkin puree (100% pure)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until moistened. Press firmly into the bottom of an 8×8 inch baking dish.
  3. Bake the crust for about 10 minutes until lightly golden.
  4. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add pumpkin puree and eggs one at a time. Blend in cinnamon and nutmeg.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake again for 25-30 minutes until the center is set but slightly jiggly.
  7. Cool completely at room temperature before refrigerating for at least two hours. Slice and serve with whipped cream if desired.
