  • 68 medium apples (mix of Honeycrisp and Granny Smith)
  • 4 cinnamon sticks
  • 5 whole cloves
  • 2 star anise pods
  • ¼ tsp freshly grated nutmeg
  • ½ cup brown sugar
  • Water (enough to cover apples)

Instructions

  1. Wash and core the apples, then chop them into quarters.
  2. In a large pot, combine chopped apples with enough water to cover them. Add brown sugar and stir.
  3. Add cinnamon sticks, cloves, star anise, and nutmeg.
  4. Bring the mixture to a gentle boil over medium heat, then reduce to low heat and simmer uncovered for about 45 minutes.
  5. Once the apples are soft, mash them with a potato masher to release flavors.
  6. Strain the mixture through a fine mesh sieve or cheesecloth into another pot or pitcher. Serve warm garnished with additional cinnamon sticks.
