  • 1/2 tsp salt
  • 1 cup whole milk (or almond milk)
  • 1/2 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 cup fresh or dried cranberries
  • Zest and juice of 1 orange

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, oil, eggs, orange juice, and zest until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined; avoid overmixing.
  5. Carefully add cranberries and stir until evenly distributed.
  6. Fill muffin tins about two-thirds full with batter.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool in the tin for five minutes before transferring to a wire rack.
