  • 1 cup cottage cheese (low-fat or full-fat)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach (chopped)
  • 2 tbsp fresh parsley (minced)
  • 1 tbsp butter (for greasing)
  • 1 pre-made pie crust
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a pie pan with butter and fit the pie crust into it.
  3. In a bowl, whisk together cottage cheese, eggs, salt, pepper, and shredded cheese until well combined.
