  • 8 oz wide rice noodles
  • 1 cup protein (chicken, beef, or tofu), thinly sliced
  • 1 cup fresh broccoli florets
  • 1 cup carrots, sliced thinly
  • 2 eggs, beaten
  • 4 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • ½ tsp white pepper powder
  • 2 tbsp vegetable oil (divided)

Instructions

  1. Soak the wide rice noodles in warm water for about 30 minutes until pliable.
  2. In a bowl, whisk together dark soy sauce, light soy sauce, oyster sauce, sugar, and white pepper powder to create the sauce.
  3. Preheat a wok over medium-high heat; add 1 tablespoon of vegetable oil.
  4. Add the protein of your choice and stir-fry until browned (about 3–5 minutes). Remove and set aside.
  5. Add remaining oil to the pan; toss in broccoli and carrots, sautéing until bright but crisp (about 2–3 minutes).
  6. Push veggies to the side and add beaten eggs; scramble until cooked through.
  7. Add soaked noodles back into the pan along with the sauce; stir-fry for about 3–4 minutes until everything is well combined and heated through.
