  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 4 cloves garlic, minced
  • 2 tsp fresh oregano, chopped
  • 1 cup cherry tomatoes, halved
  • 2 bell peppers (any color), sliced
  • 1 medium red onion, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, and oregano. Add chicken thighs and coat well; let marinate while prepping veggies.
  3. Slice bell peppers and red onion; halve cherry tomatoes.
  4. Spread marinated chicken on one side of the sheet pan and toss veggies with salt, pepper, and a splash of olive oil before adding to the other side.
  5. Squeeze additional lemon over everything and sprinkle extra oregano if desired.
  6. Roast in the oven for about 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C). Serve hot.
