  • 2 cans (15 oz each) organic chickpeas, rinsed and drained
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 medium onion, finely chopped
  • 2 cups low-sodium vegetable broth
  • 2 cups fresh spinach (optional)
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger to the pot. Stir continuously for about 1 minute until fragrant.
  3. Sprinkle in the cumin, coriander, and turmeric. Toast the spices for about 30 seconds until aromatic.
  4. Add the rinsed chickpeas and vegetable broth; stir to combine. Bring to a simmer.
  5. Stir in the coconut milk and let simmer on low heat for 15-20 minutes until thickened. Optionally add spinach during the last few minutes of cooking.
  6. Serve hot with rice or naan.
