  • 1 cup mascarpone cheese
  • 24 savoiardi biscuits (ladyfingers)
  • 1 cup strong espresso or coffee, cooled
  • 2 tbsp unsweetened cocoa powder, sifted
  • ½ cup granulated sugar
  • 4 large eggs, separated
  • 1 tsp pure vanilla extract

Instructions

  1. Prepare your ingredients by ensuring everything is at room temperature.
  2. Brew 1 cup of strong coffee and let it cool slightly.
  3. In a mixing bowl, whisk egg yolks with sugar until pale and creamy (about 5 minutes).
  4. Gently fold in mascarpone cheese until smooth.
  5. In a separate bowl, whip egg whites until stiff peaks form, then fold into the mascarpone mixture carefully.
  6. Quickly dip each ladyfinger into the coffee on both sides, then layer half at the bottom of your dish.
  7. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and remaining mascarpone.
  8. Sift cocoa powder over the top layer before covering and refrigerating for at least 4 hours or overnight.
