Instructions

  1. Preheat oven to 325°F (160°C).
  2. Place six ramekins in a baking dish.
  3. In a saucepan, heat heavy cream over medium until steaming.
  4. Whisk egg yolks and granulated sugar in a bowl until pale.
  5. Gradually whisk warm cream into the egg mixture until smooth.
  6. Stir in vanilla and salt; pour into ramekins.
  7. Add hot water to the baking dish, halfway up the ramekins.
  8. Bake for 30-35 minutes until set but slightly jiggly.
  9. Cool at room temperature; refrigerate for at least 4 hours.
  10. Before serving, sprinkle sugar on top and caramelize with a kitchen torch.
