Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley or thyme, chopped
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. 1. Cook the chicken: Boil chicken breasts in salted water for 15-20 minutes until fully cooked. Shred into bite-sized pieces.
  2. 2. Sauté aromatics: In a skillet, melt butter over medium heat. Add chopped onions and garlic; sauté until golden brown.
  3. 3. Mix ingredients: In a large bowl, combine shredded chicken, sautéed onion and garlic, breadcrumbs, eggs, Parmesan cheese, herbs, salt, and pepper. Mix until well incorporated.
  4. 4. Shape croquettes: Wet hands and form the mixture into small oval patties about 2 inches long.
  5. 5. Fry: Heat oil in a skillet over medium-high heat. Fry each croquette until golden brown on both sides (about 3-4 minutes per side). Drain on paper towels.
