  • 1 cup pumpkin puree (fresh or canned)
  • 4 cups vegetable broth
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • ½ cup Parmesan cheese, freshly grated
  • 2 tbsp olive oil
  • 6 fresh sage leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  3. Stir in Arborio rice, coating each grain with oil. Toast for 1-2 minutes.
  4. Gradually add warmed vegetable broth one ladle at a time, stirring constantly until absorbed before adding more.
  5. After about 15 minutes of cooking, stir in pumpkin puree and chopped sage leaves. Continue simmering until creamy (around 5 minutes).
  6. Remove from heat, fold in Parmesan cheese until melted, and season with salt and pepper before serving.
