  • 12 jumbo pasta shells
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1.5 cups Alfredo sauce (store-bought or homemade)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the jumbo shells in salted boiling water until al dente; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté diced chicken until cooked through. Add spinach and cook until wilted.
  4. In a bowl, combine the chicken-spinach mixture with ricotta cheese, half of the mozzarella, salt, and pepper.
  5. Stuff each shell with the filling and place them in a baking dish.
  6. Pour half of the Alfredo sauce over the shells and sprinkle with remaining mozzarella and Parmesan.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
