  • 8 oz fettuccine pasta
  • 5 oz Boursin cheese
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup fresh spinach or cherry tomatoes
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in a pot of salted boiling water until al dente (about 8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the spinach or cherry tomatoes to the skillet and sauté for 3-4 minutes until tender but still crisp.
  4. Lower the heat and stir in the Boursin cheese along with a splash of reserved pasta water until creamy.
  5. Toss the drained pasta into the skillet, coating it well with the sauce. If too thick, add more pasta water gradually.
  6. Season with salt and pepper to taste, then garnish with freshly grated Parmesan before serving hot.
