  • 1 lb ground lamb or beef
  • 2 medium carrots, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 medium Yukon Gold potatoes, peeled and cubed
  • 1 cup frozen peas
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Add ground meat and cook until browned. Stir in carrots and cook for another 3-4 minutes.
  3. Pour in vegetable broth along with potatoes, thyme, rosemary, salt, and pepper. Bring to a gentle boil then reduce heat to simmer for 20 minutes.
  4. Once potatoes are fork-tender, add frozen peas and cook for an additional 5 minutes.
  5. Mash half of the soup mixture lightly for creaminess. Serve warm with fresh herbs as garnish.
