  • 4 cups fresh pumpkin, peeled and cubed
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 2 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • Chili flakes (optional)

Instructions

  1. In a large pot over medium heat, sauté diced onion in oil until soft, about 5 minutes. Add minced garlic and ginger, cooking until fragrant.
