  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 6 cups low-sodium chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the carrots and celery and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté garlic, carrots, and celery for about 5 minutes until softened.
  3. Add chicken breasts seasoned with salt and pepper; cook until golden brown, about 4-5 minutes per side.
  4. Pour in chicken broth and enough water to cover the ingredients by an inch. Bring to a boil, then reduce to a simmer.
  5. Stir in orzo pasta and cook according to package instructions (8-10 minutes).
  6. Just before serving, mix in fresh lemon juice, parsley, and thyme; adjust seasoning if needed.
