  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 6 cups low-sodium chicken broth
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 2 medium carrots, sliced thinly
  • 2 celery stalks, finely chopped
  • 1/4 cup fresh dill or parsley, chopped
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté the chicken breasts until golden brown and fully cooked (about 5-7 minutes per side). Remove from pot and set aside.
  2. In the same pot, add garlic, carrots, and celery. Sauté until fragrant and tender (about 5 minutes).
  3. Pour in the chicken broth and bring to a simmer. Return the cooked chicken to the pot.
  4. Simmer for 15 minutes before stirring in fresh lemon juice and adjusting to taste.
  5. Add chopped herbs along with salt and pepper. Cook for an additional few minutes before serving.
