  • 2 cups cherry tomatoes, halved
  • 8 oz pasta (spaghetti or penne)
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup freshly grated Parmesan cheese
  • Salt to taste

Instructions

  1. 1. Boil water in a large pot, add salt, and cook the pasta according to package instructions until al dente. Drain and reserve some cooking water.
  2. 2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds until fragrant.
  3. 3. Add halved cherry tomatoes to the skillet and cook until they soften and release their juices.
  4. 4. Stir in chopped basil just before the tomatoes blister.
  5. 5. Combine the drained pasta with the tomato mixture. If needed, add reserved cooking water for a light sauce coating.
